I would suggest some of the "easy" two-hour classes in Applied Health Sciences (the college RST is in). These two hour classes are all relatively easy: CHLH 206, CHLH 243, and KIN 120. Easy sciences classes I have taken: IB 100, IB 105, and NRES 100. These are all three credit hours. ECE 385.

Fun fact: we once had a Humanities major with very little math background sign up to take Math 347 in the summer because the student needed a Quant II, never mind prerequisites. Math has Math 181, A Mathematical World, as a good course for filling quant reasoning requirements. Note that you can use a Quant I to fill the Quant II requirement.

Mcb 402 is very easy and pretty fun imo. 317 like you said was pretty solid, I also just took MCB 300 this semester and didn’t find it particularly fun or interesting, but it was pretty easy since exams were open note.
