I haven't used Rivers of Blood yet but Eleonora's Poleblade ash of war can easily stagger enemies and build up blood super quick. Flashy and hits like a truck.

Any weapon can do you the whole game. Elonoras is decent, and bleed is always good. I basically played the entire game by dual wielding eleonora’s poleblade and seppukku godskin peeler. It was pretty fun, and very effective, though it does get less effective when the enemy doesn’t bleed. It kicks butt. You may wanna explore some more caelid.
